Texas Pork No Bean Chili – Serves 15

Ingredients
4 oz bacon
8.5 lb pork shoulder
4 cups onion
10 cloves garlic
4 poblanos (roasted, peeled and chopped)
5 T chili powder
2 T cumin
4 oz tomato paste
16 oz tomato sauce
1/2 can chipotles in adobo sauce (use more if you like heat)
3 quarts chicken stock
28 oz can peeled tomatoes
S&P to taste
Directions
Season shoulder with salt and pepper and sear in a large, heavy pan. Add onions, garlic and bacon and continue until bacon is fully cooked. Add tomato paste and spices. Stir. Cheddar and Bacon Cookies

Cheddar and Bacon Cookies
Mix up the dough to keep in your fridge and “slice and bake” as needed. The “cookies” are best eaten right away but can be stored in an airtight container for up to 3 days.

Yield = approx 35 cookies

Ingredients:

4 oz raw bacon, cooked extra crispy and crumbled finely
8 oz all purpose flour
6 oz sharp cheddar
1 stick butter, softened
4 Tbs heavy cream
1/2 tsp ground red pepper
1/2 tsp salt

Directions

Preheat oven to 350 degrees.
Combine butter, cream, oil, salt and cayenne.
Add cheese and flour and mix very well.
